Delicious Quinoa

Ingredients:

  • 3 c. water

  • 1 1/2 c. Quinoa

  • 1/2 c. sliced almonds

  • 1 onion, chopped

  • 1/2 c. craisins

  • 1-2 c. Mushrooms

  • 1 T. Olive Oil

  • 1 t. Chick-it Seasoning

Directions:

  1. Heat oil in skillet over medium heat. Sauté onion, add sliced almonds and cook for a few minutes.

  2. Add rinsed quinoa and sauté until lightly browned.

  3. Boil 3 c. water and add the contents of the skillet along w/ 1 t. chick-it seasoning.

  4. Sauté mushrooms and add to quinoa. Reduce heat and cook about 20 minutes until water is absorbed.

  5. Fluff with a fork and serve.
