Delicious Quinoa
Ingredients:

3 c. water
-
1 1/2 c. Quinoa

1/2 c. sliced almonds
-
1 onion, chopped
-
1/2 c. craisins
-
1-2 c. Mushrooms
-
1 T. Olive Oil
-
1 t. Chick-it Seasoning
Directions:
-
Heat oil in skillet over medium heat. Sauté onion, add sliced almonds and cook for a few minutes.

Add rinsed quinoa and sauté until lightly browned.

Boil 3 c. water and add the contents of the skillet along w/ 1 t. chick-it seasoning.

Sauté mushrooms and add to quinoa. Reduce heat and cook about 20 minutes until water is absorbed.

Fluff with a fork and serve.
